鼎泰豐 (Ding Tai Fung)

Ding Tai Fung is one of my all time favorite restaurants. Ever since I was a kid, I would be stuffing my mouth with those soup dumplings that burst of flavor every time you bite into it. Although you have to wait for a relatively long time, when you step into the restaurant, it makes everything worth waiting.
When you first walk in, due to the new technological advances and possibly worker shortage, you would be guided to your seat with a robot. All you have to do is follow in its footsteps. However, this does not affect their hospitality or friendliness. Ding Tai Fung is one of those restaurants that would make you feel like you are at your grandmother’s house. Each customer is treated with utmost respect, which makes their experience so memorable. I remember, when I was younger, my family would ask for scissors to cut the food into smaller pieces that makes it easier to chew for a child like me. They always bring out scissors that would be still warm, as if they’ve just been sterilized. This made families feel safe eating there.
When sitting down at your seat, there would be tea served to you if you’d like and they already have the table cleaned spotlessly with the utensils laid out properly. Since they give you a QR code to scan for ordering meals, all you have to do is wait in suspense for the food to come. Every time someone walks by with steaming food, clouds of warm steam curl upward, releasing a comforting, mouthwatering whiff of air that fills the space. Each time someone walks by just makes my stomach growl.
Ding Tai Fung is a restaurant that was started in Taipei, Taiwan by a couple that dedicated their craft to xiao long bao (soup dumplings). Their craft has been expanded to locations across the world. They have also earned a Michelin star over the years. That Michelin Star was well-earned, as the food is all delicious and mouth-watering.

On social media, their cucumber salad is the most famous, while some may say it is overrated. I personally think the hype is just. As it is an appetizer, they serve it to you at the start, and its perfect crunch and chili oil make my pupils dilate. Also, it is becoming a tradition for my friends and I to go to Ding Tai Fung after exams, so it really restores life back into me and I remember to enjoy things and not be so stressed out. After you’re done with the cucumber salad, there is a pairing that I cannot pass on, which is the chili oil drizzled onto the fried rice. It coats each grain with a glossy layer of spice that is also sweet that lingers just enough to keep you coming back for another bite.
Another can not miss dish is their dumplings, specifically the xiao long bao. It is their signature. In each restaurant, there would be a part of the kitchen where the customers would be able to see the chefs making dumplings made with delicate care. You can see an assembly line that really highlights the care put into the food we eat. Each dumpling is measured, rolled out, stuffed, then wrapped with precision.


I could go on about Ding Tai Fung endlessly. Going to Ding Tai Fung for food isn’t like any other restaurant, it’s an experience. From the meticulously prepared dumplings to the fragrant cucumber salad and fried rice, every detail is carefully crafted. Whether you’re a first-time visitor or a longtime fan like me, stepping into the restaurant always feels like a flavorful escape. It’s a place where food, care, and tradition come together in every bite.
